Coconut Crab Rice- Wabi Nabe

One more one pot recipe for your Wabi Nabe. -GLH


Wabi Nabe Coconut Crab Rice


2 tablespoons butter
1 small sweet onion, peeled and finely chopped= approx. 1.5 cups
2 garlic cloves, peeled and minced
1 teaspoon Sante Fe chili powder 
1 teaspoon ground coriander
1.5 teaspoons ground cumin
1 can  (14 oz.) coconut milk
3 cups rice (basmati, jasmine, long grain) 
2 cups water
salt and pepper to taste
1/2 cup chopped green onions
1 can (6 oz.) cooked crab meat
1 cup toasted unsweetened coconut
zest and juice of 1 lime
small handful of fresh cilantro, chopped
In the Wabi Nabe melt butter over medium heat.  Add yellow onion, garlic, chili powder, coriander, and cumin. Cook until soft, about 5 minutes.  Add coconut milk, remembering to scrape the bottom of the W/N.  Add rice, water, and juice of crab meat to W/N. Bring to a boil, reduce heat, cover and simmer for 30 minutes. Toss in green onions, crab meat, lime zest and juice, and fresh cilantro.  
Season with Sriracha sauce!
